Yummy made easy

These are the easiest and quickest cookies I believe I have ever made. my friend Amy made them once when we went over to her house and I almost ate the whole plate.

I would describe them as “if peanut brittle wanted to be a cookie, this is what it would be”. There are only 3 ingredients and they are things you probably have in your cupboard right now. How easy is that?

1 cup crunchy peanut butter

1 cup sugar

1 egg

Mix all of these together with a fork. Spoon out the dough and bake at 350 for 12-15 min. Place on a rack to cool.

Isn’t that almost too easy. I guess it could be too easy in a bad way as well because you could make them all the time. 🙂 But I figure with the peanut butter and egg they lean to the healthy side. Just a little.

I got to thinking how great these would be is you melted down some chocolate and dipped one side or even drizzled it over the tops of the cookies. Quick and easy for the holidays when we are all trying to come up with ideas for gifts.
